Which thickness should I use?

While both the 40 mil and 60 mil thicknesses are heavy-duty, there are advantages to each. The 40 mil is ideal for areas where you are trying to conform the plastic to a specific ditch shape where the 60 mil conforms slightly less but provides more puncture resistance and is ideal for areas which may see more foot traffic. Both thickness are designed to be buried below either rocks or dirt with minimal risk of puncture.

Does the material bend?

The HDPE material is flexible but cannot bend both laterally and vertically at the same time. To make a bend you will need to cut the material, turn and overlap.
